The retarder proofer, available in various models, allows to plan the working cycle in pastry laboratories, bakery and pizzeria by setting the storage, rising and maintenance phases.
This system offers several advantages of reducing the night work and programming the baking production in the different hours of the day, according to the demands.
The control panel is managed by a micro-processor and it allows to customize up to ten different work schedules. The pre-fabricated modular panels are equipped with self-locking hooks inserted in the polyurethane for a quick assembly. The proofer is insulated with an 8 cm layer of polyurethane rigid foam. The external structure is made of white coated galvanized metal sheet, while the internal structure is made of AISI 304 stainless steel. Insulated reinforced floor, insulated door and internal side-protections are made of stainless steel. The external ramp is made of stainless steel. The automatic production system of hot steam is made of stainless steel.
Equipped with ventilated refrigeration designed for a balanced and uniform temperature distribution, automatic defrosting system and internal light.
