Double arm mixers with fixed bowl - ideal for bakeries and pastry shops producing large leavened doughs such as panettone or pandoro, or even slow-ripening and delicate doughs such as pizza or homemade bread.
All of the following mixers are built with a sturdy, powder-coated steel frame and a stainless steel upper cover. The safety guard is made of specially molded plexiglass and secured to a special stainless steel frame. The use of plexiglass allows operators to monitor the dough while it is being processed. The guard features a small opening for adding ingredients or water without having to stop the dough from being processed.
The mechanics of the IBT fixed bowl mixer are simple yet extremely robust. Oil-bath gears ensure minimal maintenance over time and exceptionally quiet operation. Belts transmit motion to the bowl complete the design. All parts in contact with the dough are certified and are made entirely of stainless steel. The tools are made of stainless steel and feature special sealed ball bearings that ensure minimal maintenance over time.
IBT mixers come standard with an electrical system with electromechanical controls - a 2-speed motor (62 strokes per minute) and a timer (a 2-minute timer is also available upon request). We also offer a version with tool speed adjustment via a potentiometer inverter, particularly recommended for those who use the mixer frequently for the production of large leavened products.
Special features include excellent dough oxygenation without any damage or heating. It can be used for pastry, bakery, and pizzeria products, as well as in dairies for mozzarella dough (which in this version is constructed entirely of stainless steel).
