Many adjustments are possible, as are the types of products that can be produced. Weight is varied by varying the speed of the blade using a three-position selector, then the dough thickness is adjusted to achieve the desired weight. Adjustments to the dough thickness and the moulder cylinders are all manual using ergonomic levers located on the side of the unit.
Dough loading is done manually or automatically ( if the corresponding automatic dough feeder is used ), and the speed of the dough loading belt is also adjustable. The loading belt holds approximately 10-12 kg of dough.
For format changes or simply replacing the blade, the operations are extremely simple and quick. Simply go to the rear of the unit, lift the safety cover (which will shut down the machine according to regulations), and you'll have full access to the knife change area. No mechanical disassembly is required to replace the knife; it can all be done manually by the same operator. In the same area, you can also complete routine cleaning and clean the cylinder scrapers.
All the knives in our bread units are handcrafted; they are made of steel and then Teflon-coated for non-stick properties, making them suitable for working with soft and leavened dough.
The moulder completes this unit, which is fixed and non-movable. Upon request, a movable moulder can be supplied to produce many other types of bread.
The Pratico series bread unit is an extremely compact and functional machine. It allows you to produce a variety of rolled breads, from zoccoletti (rolled loaves) and banana bread loaves, rustic bread, small filoncini, baguette and much more.
