The structure is very compact and small, made entirely of gray powder-coated steel. The external casings are stainless steel, as are the cutting knives, which are entirely made of steel and Teflon-coated for soft, delicate doughs.

 

The cutting head assembly is derived from the automatic unit for rolled bread, which in this version is slightly modified for much softer, more hydrated doughs, such as ciabatta. Changing the knife is extremely quick and easy; simply lift the casing (which, by law, interrupts the unit's work cycle) and you can access the cutting head. With simple manual movements, you can remove the knife, replace it, or perform routine cleaning, also accessing the cylinder scrapers.

 

The weight varies depending on the knife, cutting speed, and dough thickness setting. All adjustments are electromechanical, from the speed selectors to the manual levers for dough or cylinder thickness (if purchased with the unit with the moulder).

 

The machine offers great maneuverability and adaptability to various types of dough, shapes, and weights. It is equipped with a large-capacity loading belt and an anti-tear device for constant feeding to the cutting unit. The machine's anti-stress cutting head system ensures correct and smooth cutting of the dough.

 

It is therefore suitable for a wide variety of products, from classic ciabatta, rye flour dough, and multi-grain dough, to even products that require rolling after dividing, if purchased with the moulder for rolled bread at the exit.
