Automatic dividing and rounding line for high hydration doughs - sourdough and panettoncino
The new line dedicated to leavened products weighing between 20 g and approximately 150 g – designed to automate the dividing and shaping process of high-fat products, which would otherwise be difficult to handle by hand, and for processing highly hydrated dough.
The line features the new SAM series automatic volumetric divider. Available in various versions and outputs (from 4 to 8 rows), the divider was specifically designed for dividing small quantities and shares the dividing system via a machined half-moon with an internal chamber entirely made of stainless steel and a sliding piston. All parts in contact with the dough are easily removable, from the pistons to the scrapers to the detaching belt, which, thanks to a simple pin, can be removed from the machine structure without the need for mechanical disassembly.
The divider is easily adjustable for different types of dough, from the stickiest to the toughest, thanks to the ability to automatically adjust chamber pressure and ejection. It also features a 7" color touchscreen, where you can save up to 90 recipes, customize production speeds, and adjust all internal parameters. It can be easily integrated into automated lines.
The structure, as is the electrical system, is entirely made of stainless steel and is equipped with wheels for easy movement. All casings are made of stainless steel and are micro-welded for operator safety. The machine is also equipped with an external buzzer for an acoustic safety signal
The divider is then combined with the ARC series dough rounder system, which in this version is larger and features a thick, all-stainless steel structure. All the cones are equipped with a metric bar for precise adjustment. A smooth and negative pyramid belt for the cones allows for the rounding of various types of products, from classic panettone and large leavened products to products with a high hydration content... such as pizza, pinsa romana, or products with hydration levels equal to or greater than 80 %. There is also a special spraying system that also allows for the rounding of dough with over 88 % hydration
Speed regulation is automatic, and as the divider's output varies, the rolling unit automatically adjusts accordingly. The setting of the cones remains manual, but once adjusted, it is easily usable for almost all of the products listed above. The rounding process has a "manual" effect, and the closing can be adjusted by applying more or less force to the product itself.
This line therefore allows you to automate the dividing and forming – moulding process and can also be supplied, upon request, with fully automatic product placement on the tray.
